Apple Hand Pies with Cinnamon Glaze

My sister, mom and I absolutely love apple pie! Its gotta be one of our favorites during the holiday season, Thanksgiving specific. We love it with with vanilla icecream and it is such a treat. I made this recipe as an inspiration to them and they came out perfect. This recipe is a labor of love. However, when you're treating the people you love around the holidays, they would appreciate it very much.

I made a large batch so we had a lot extra. My husband took them to work and his co workers loved them, which makes me so happy! This is such a fun recipe to make because its an easy hand held dessert. People can take them on the go, so they're not so messy. Whats not to love?


Apple Hand Pies with Cinnamon Glaze


Ingredients 

  • 6 large green apples, diced or 8 mini green apples (about 6 cups diced apple)

  • ½ cup granulated sugar 

  • ½ cup brown sugar

  • 1 tsp vanilla extract 

  • 1 tsp cinnamon 

  • ¼ tsp kosher salt 

  • Half lemon, juiced

  • 1 tbsp cornstarch and 1 tbsp water mixed in a small bowl (thickening agent)

  • 2 packages premade pie dough (this makes 24 pies)

  • 1 egg and 1 tsp water whisked in a small bowl to brush over the pies


Directions 

  1. Preheat the oven to 425 degrees. Spray a baking sheet with nonstick spray.

  2. In a medium size skillet set to medium heat. Place the apples, granulated sugar, brown sugar, cinnamon, lemon juice, vanilla extract and salt. Stir to combine. Top with lid. Cook for 12-15 minutes on medium low heat.

  3. Once the apples are softened, turn the heat off. Pour the cornstarch and water mix into the cooked apples. Stir until combined and it starts to thicken. Allow the apple compote to cool completely. 

  4. Roll out the dough. Cut into 3 inch rounds (I used a glass cup). Use the scraps to roll out again and cut into more rounds. (try to use the entire pie dough)

  5. Place 1 tbsp apple filling into the center round pie dough. Place another round pie dough over the filling and crimp the edges with a fork. Place on the baking sheet. Repeat. 

  6. Cut 2 slits on the top of each hand pie. Brush over the egg wash on each pie. Bake for about 13-15 minutes. Until golden brown on the edges. 


Cinnamon glaze

  • Half cup powdered sugar 

  • ½ tsp cinnamon 

  • 1 tbsp milk 

Whisk all the ingredients together. Drizzle over the hand pies.
