Baked Buffalo Chicken Tenders and Fries

Its no secret that buffalo chicken (tenders or wings) are one of America's favorite game day foods. Its definitely mine and my husband Eric's favorite. Anytime I get to make them at home, its such a treat and prefer it. Especially my baked fries... they could pass as restaurant quality crisp fries but with less saturated fat. Cooking at home is just so much better. For your next game day, make these tenders and fries! you won't regret it.


Buffalo Chicken Tenders


Ingredients 

  • 1.5 lbs chicken tenderloins (10 tenders)

  • 2 eggs

  • 1 ¼ cup plain breadcrumbs

  • ½ tsp kosher salt 

  • ¼ tsp fresh cracked pepper

  • 1 tsp garlic seasoning salt 

  • ½ tsp smoked paprika

  • ½ tsp cayenne pepper

  • Buffalo sauce of your preference 



Directions 

  1. Preheat the oven to 425 degrees. Spray or drizzle olive oil onto a large baking sheet.

  2. Pat the chicken dry and lightly season the tenders with salt and pepper. 

  3. Set up the dredging station: use 2 separate wide bowls. In one bowl, whisk the eggs, ¼ tsp kosher salt and ¼ tsp pepper. In the other bowl, combine the breadcrumbs, paprika, garlic seasoning salt, cayenne and pepper. 

  4. Dip the tenderloin into the egg wash, then into the breadcrumbs. Dip the chicken back into the egg wash and into the breadcrumb mixture for a thick coating (this is a double dredge).  Place the tenderloin onto the sheet pan. Repeat until all tenders are done. 

  5. Bake for about 20-22 minutes. Flipping halfway through cooking time. 

  6. Toss the tenders or brush over your desired buffalo sauce. Garnish with celery or carrots. Serve with a ranch dipping sauce. I garnished with sliced celery, but this is optional. Enjoy!


Baked fries Recipe *Optional 

  • 1 russet potato 

  • 1 sweet potato 

Directions 

I used a separate oven for the fries. 

Preheat the oven to 425 degrees. Cut the potatoes in a fry shape. Place them on the sheet pan. Drizzle generously with olive oil or avocado oil spray. Season with garlic seasoning salt and pepper Toss the fries so they are coated entirely in the seasoning. Space the fries to ensure a crisp fry. Bake for 25-30 minutes, flipping halfway through cooking time.
