Baked Honey Soy Chicken Thighs

Super easy one sheet pan dinner is right here and ready to roll out for the week! Cold days and nights like these in the winter, grilling may not be the best idea. I'm keeping the meal prep cooking to indoors with this recipe.

The reason why this recipe is so easy is because the chicken gets placed on the sheet pan and the marinade is mixed together in small bowl or a measuring cup and poured over the chicken. The oven is doing all the work for me, so I can get other side dishes prepared in the meantime (i.e steamed rice, veggies, etc)

The chicken comes out super flavorful with the sweetness from the honey, and salty umami flavor from the soy sauce, it comes out tender and caramelized. Serve over steamed rice and vegetables, topped with scallions and sriracha, it comes out nice tender! It meets all the tastebuds.

Who says healthy weeknight meal prep meals have to be bland and boring?!



Baked Honey Soy Chicken Thighs


Ingredients

  • 4-4.5 lbs chicken thighs, boneless and skinless

  • ⅓ cup low sodium soy sauce

  • 6-8 garlic cloves, minced

  • 3 tbsp honey

  • 1 tbsp sriracha

  • ½ tsp sesame seed oil

  • 1 tsp ginger, grated

  • ½ tsp kosher salt

  • ½ tsp fresh cracked pepper




Directions


  1. Preheat the oven to 425 degrees Fahrenheit.

  2. Pat dry chicken thighs and trim off any excess fat. Season with a pinch of salt and pepper over the chicken and place them on a large baking sheet.

  3. In a small bowl combine the soy sauce, garlic, honey, sriracha, sesame seed oil, ginger, salt and pepper.

  4. Pour the marinade over the chicken, making sure all chicken thighs are coated.

  5. Bake for about 35 minutes until brown and caramelized.

  6. Serve with steamed rice and vegetables and top with green onions and sriracha.
