Banana Oatmeal Blender Muffins

I'm a huge ingredient meal prepper because my husband and I work and have long days. So, we want to be able to get home, have a quick snack or meal that's already sitting in our fridge. These muffins are just that! They're super easy and quick to make. Store them in the fridge for the week and pop it into the microwave when you want it before a workout or before you head to work. I'll usually eat these as a midday snack or for breakfast in the morning after I eat 2 boiled eggs. Its my "something sweet" that I crave or need after I eat my eggs.

Banana Oatmeal Blender Muffins

Ingredients

  • 3 cups whole oats

  • 3 ripe bananas

  • 2 eggs

  • ¼ cup melted coconut oil

  • ⅓ cup almond milk

  • ¼ cup sugar

  • ½ tsp baking powder

  • ¼ tsp baking soda

  • ½ tsp kosher salt

  • 1 tsp vanilla extract


Stir this after blending

  • 2 tbsp chia seeds *optional

  • 1 cup semi sweet chocolate chips plus more to top


Directions

  1. Preheat oven to 350 degrees F. Spray a muffin pan with nonstick spray or use a muffin rubber mold.

  2. Blend all the ingredients in a blender. Lastly, stir in the chia and chocolate chips. Pour evenly into the muffin tins. (If you want...Top each muffin with a couple chocolate chips) Bake for about 30 minutes.


Note: Store in the fridge for the week and heat them up in the microwave for 10-15 seconds when you're ready to eat it.
