Banana Walnut Cake Bars with Cream Cheese Frosting
Ingredients
3 eggs
4 ripened bananas, mashed
1 tsp vanilla extract
½ cup granulated sugar
2 sticks butter, unsalted, melted and cooled
2 cups all purpose flour
1 tsp baking soda
½ tsp kosher salt
Half cup crushed walnuts
Cream Cheese Frosting
8 oz package cream cheese, room temperature
2 tbsp unsalted butter, room temperature
½ tsp vanilla extract
1 cup and 2 tbsp powdered sugar
Directions
Preheat the oven to 350 degrees Fahrenheit and grease a 13x9 baking dish.
In a large bowl, whisk the eggs, vanilla, mashed bananas and sugar. Slowly whisk in the melted butter.
Slowly mix in the flour, baking soda, and salt until the batter comes together. Fold in the crushed walnuts. Pour into the baking dish and bake for about 35 minutes or until a toothpick comes out clean. Allow to cool.
In a medium size bowl, using a hand mixer, beat the butter and cream cheese until creamy. Then, add the vanilla extract. Gradually mix in the powdered sugar until a creamy frosting consistency.
Frost the top of the banana cake. Slice and serve.
