Chocolate Chip Cookie Cake with Cheesecake Filling

One of the most satisfying desserts ever! We are kicking it up a notch! To all my chocolate chip and cheesecake lovers... You can combine the two, of course! The creamy cheesecake filling is sandwiched between chocolate chip cookie dough and baked till just slightly browned on top with a soft and creamy center. They are so delicious. A perfect little treat that will be devoured within the day!



Chocolate Chip Cookie Cake with Cheesecake Filling

Ingredients

  • 2 cups of unbleached all-purpose flour

  • ½ tsp baking soda

  • 1 tsp of baking powder

  • ½ tsp salt

  • 8 tbsp unsalted room temperature butter (1 stick)

  • 2 large eggs

  • 1 ½ tsp of vanilla extract

  • 1 cup packed brown sugar

  • ½ cup of granulated sugar

  • ½ cup of semisweet chocolate chips

  • 1 cup milk chocolate chips


Cheesecake Filling

  • 1 pack 8 oz cream cheese, room temperature

  • 1 egg

  • ½ cup granulated sugar

  • ¼ tsp kosher salt

  • ½ tsp vanilla extract


Directions


  1. Preheat the oven to 350 degrees Fahrenheit. Prepare a 9x9 square baking pan with nonstick spray or place a sheet of parchment paper at the bottom of the pan. Set aside.

  2. In a bowl, mix the dry ingredients. This includes: flour, baking soda, baking powder, and salt. Set aside.

  3. Using a stand mixer with the attachment paddle, cream the butter, brown sugar and granulated sugar for about 3-5 minutes. Turn off the stand mixer, and add in the eggs and continue mixing again. After it is completely mixed through, add the vanilla extract and continue mixing until all the wet ingredients have mixed thoroughly.

  4. Add half of the flour mixture until it is mixed through, then add the rest of the mixture and continue until all the ingredients are thoroughly combined. The consistency of the dough will be chunky, add the chocolate chips and mix. Let the dough rest in the fridge.

  5. Meanwhile, using a hand mixer, beat the cream cheese, sugar, egg, salt and vanilla extract until a smooth and creamy consistency.

  6. Place half of the chocolate chip cookie dough on the bottom of the pan, spread evenly. Then, pour the entire cheesecake mixture evenly. Lastly, top with the rest of the cookie dough. It's okay if you don’t top the cheesecake perfectly.

  7. Bake for 35-40 minutes. Let cool completely. Place in the refrigerator to chill completely and cut into squares. Ready to serve.
