Fresh Strawberry filled Cake with Whipped Cream

The easiest way to turn boxed cake into something just light, fresh, and delicious! This one is a family favorite!!! I make this at least 3-5 times a year for a family member's birthday or a holiday party. Everytime my family asks for a cake that's not too sweet and heavy, this is a go to recipe.

All you need is white cake mix, strawberries, powdered sugar and heavy whipping cream.

I'm not the perfect cake froster, but I don't mind a rustic, naked cake. I usually do light on the frosting or whipped cream, but you can use as much whipped cream as you want on this cake.

Either way, your family will devour it! If they love strawberries of course!


Fresh Strawberry Filled White Cake with Whipped Cream



Ingredients



  • Boxed White Cake

  • 1 pound strawberries, diced finely

  • Powdered sugar, ⅓ cup & ½ cup

  • 1 ¼ cups heavy whipping cream


Directions


Preheat the oven to 350 degrees Fahrenheit. Spray two 8 or 9 inch round cake pans with nonstick spray or butter.

Prepare the cake batter following the instructions on the box.

***Some tips and tricks to make sure the cake is moist: replace water for milk and add an extra egg and replace vegetable oil for melted butter.

Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes, until the toothpick comes out clean. Allow to cool completely.


Meanwhile, combine the diced strawberries with ⅓ cup powdered sugar. Place in the fridge to keep chill.



Using a standmixer or hand mixer, whip the cream for about 8-10 minutes until stiff peaks, add ½ cup powdered sugar and mix for about a minute, so that the whipped cream is just the right amount of sweet.

You can add a tablespoon more powdered sugar if you want it more sweet. Keep chilled in the refrigerator until cake assembly.


To assemble cake


Place the flat side layer down on a flat plate or cake stand. *optional -You can cut the top of the cake horizontally, so it’s even.

Using a flat knife or offset spatula, spread about half or most of the strawberry mixture in the middle evenly.

Again.. This is optional* You can cut the top of the cake horizontally, so it’s even.

Place the top cake on top of the strawberry filling. Spread the whipped cream on top and spread evenly on the sides of the cake.

Allow to chill in the fridge for about an hour.

Top with the rest of the strawberries on the cake.
