Fudge Brownie Cookies

Why not turn brownies into a cute little cookies? These are so easy to make, my nephew is obsessed with anything chocolate dessert. He can absolutely devour these. Hope you enjoy them as much as he does!


Fudge Brownie Cookies


Ingredients 

  • 1 stick butter, unsalted or salted 

  • 1 ⅓ cups semi sweet chocolate chips

  • 1 tsp instant coffee 

  • 2 eggs 

  • ½ cup granulated sugar 

  • ¾ cup brown sugar 

  • 1 tsp vanilla extract 

  • ¼ cup cocoa powder

  • ½ tsp kosher salt 

  • ¼ tsp baking powder

  • 1 cup all purpose flour


Directions


  1. Preheat the oven to 350 degrees Fahrenheit, line a baking sheet with parchment paper or a silicone mat.

  2. Sift the flour, cocoa powder, salt and baking powder. Set aside. 

  3. In a medium size pot, melt the butter and whisk in the chocolate chips. Once melted, whisk in the instant coffee. Once silky smooth, set aside to cool. 

  4. Meanwhile, beat the eggs and sugar. Add the vanilla extract, continue mixing until it turns pale in color. 

  5. Slowly pour and whisk the chocolate into the egg mixture. Continue whisking until incorporated. 

  6. Mix in the flour mixture until it becomes a cookie dough batter. Scoop and form into even size balls. Bake for 10 minutes! Allow them to cool and enjoy! I added a tiny bit of flakey sea salt in this photo, but this is totally optional.
