Sweet Chipotle Grilled Chicken Thighs

I'm all about meal prep. Sundays come around and I think, "what would be a tasty and satisfying meal prep for this week?" I love sweet and spicy meat. Which is why I am such a fan of spicy bbq.

My husband has been asking for chicken thighs as a main source of protein for the week. I needed to come up with another marinade... Hence, Sweet Chipotle Chicken Thighs, GRILLED, of course! We always have chipotles in adobo stored in the pantry and in the fridge for sauces, dips, meats, etc. If you haven't used chipotles in adobo or have never heard it. Essentially, its jalapeños that are smoked and dried then rehydrated and canned with chipotle spices and such!

This marinade recipe packs a punch, its sweet, smoky, with a little kick!

If you want it super spicy, I would just add more crushed red pepper flakes.

This meal prep recipe is so easy and lasts us all week long!

You can serve it with rice and vegetables or chop it up for tacos, lettuce wraps, burritos.

Sweet Chipotle Grilled Chicken Thighs


Ingredients

  • 5-5.5 lbs chicken thighs, boneless and skinless

  • 6 garlic cloves, minced

  • 2 ½ tsp chipotle chile powder

  • 1 tsp smoked paprika

  • ½ tsp crushed red pepper flakes

  • 4 tbsp brown sugar

  • 2 tsp kosher salt

  • ½ tsp fresh cracked pepper

  • 3 tbsp chipotles in adobo, chopped

  • ¼ cup worcheshire

  • 1 orange, juiced

  • ¼ cup olive oil



Directions

  1. Pat dry chicken thighs and trim off any excess fat. Season lightly with a pinch of salt and pepper over the chicken.

  2. In a small bowl combine the chipotle chile powder, paprika, garlic, red pepper flakes, brown sugar, salt, pepper, chipotles in adobo, orange juice, worcheshire, and olive oil.

  3. Place chicken thighs in a large bowl and pour the marinade over the chicken. You can also do this in layers by placing some chicken thighs into the bowl, then pouring some of the marinade and repeat. Making sure all pieces of the chicken thighs are coated. Chill and allow to marinate for at least 30 minutes. (I’ll marinate for a couple hours)

  4. Preheat the grill to 350-375 degrees Fahrenheit.

  5. Allow the chicken thighs to come to room temperature before grilling time and grill for 8-10 minutes each side. Make sure the chicken is 165 degrees internally.

  6. Serve with rice, veggies, salad, beans, and top with pico de gallo or bbq sauce.
