Current snack that I enjoy eating are sliced bananas topped with almond or peanut butter. It's a great pre workout snack for a little boost of energy. This bread may or may not be the best idea to have before a workout.
Lets rewind back to where I had a lightbulb moment... It dawned on me. I've had my fair share of banana breads. But, not a banana bread like this.
There's no need for pancakes or waffles on a weekend morning, this loaf just does the trick. It's the perfect amount of sweetness from the bananas, plus the nutty peanut butter and it's SO soft and sorta gooey. It just has this superb moist texture. I knew my family would love it! Family ratings are eights, nines, and tens out of ten! Yes, some are my toughest critics. If you're a peanut butter and banana fan, you'll love this!
Peanut Butter Banana Bread with Chocolate Chips
Dry Ingredients
1 ½ cups all purpose flour
1 tsp baking powder
½ tsp kosher salt
Wet Ingredients
2 eggs
¾ cup granulated sugar
1 stick unsalted butter, room temperature
1 tsp vanilla extract
¼ cup milk
⅓ cup creamy peanut butter
3 ripened bananas, mashed
1 cup semi sweet chocolate chips
Directions
Preheat the oven to 350 degrees Fahrenheit and spray a 9 inch loaf pan with nonstick spray.
In a separate bowl, sift together the flour, salt, baking powder and baking soda. Set aside.
Using a stand mixer with the paddle attachment, cream the room temperature butter and sugar until combined, then add the eggs and vanilla extract. Once combined, add the peanut butter and mix again.
Start adding in the flour mixture and milk in batches until all combined.
Fold in the mashed bananas and chocolate chips into the batter and pour the batter into the prepared loaf pan.
Bake for 60- 65 minutes, until a toothpick comes out clean.
