Peanut Butter Granola

Ingredients

  • 3 cups whole oats

  • ½ cup honey or maple syrup

  • ½ cup organic lightly salted crunchy peanut butter

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • ¼ tsp kosher salt

  • 1 tbsp hemp hearts *optional

  • 1 ½ tsp ground flax seed *optional

  • 1 tbsp chia seeds *optional


Directions

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Line a large baking sheet with parchment paper.

  3. In a large mixing bowl mix together the honey, peanut butter and vanilla. Next, add in the oats, cinnamon, salt, ground flax, chia and hemp hearts.

  4. Spread thinly and evenly on a baking sheet and bake for about 18-20 minutes.

  5. Once it is golden brown in color, take out and allow to completely cool. **Optional- You can place in the freezer for about 15-20 minutes to cool quicker.

  6. Break up into clumps or crumbs. However you'd like.

  7. Store in a large airtight container. Stores up to 1 month.


Notes: You can add chocolate chips, dried fruit, or nuts into the mix after the granola is completely cooled and broken up into clumps.


Enjoy on its own as a snack, topped on yogurt, smoothie bowls, or as cereal (in a bowl with you're milk preference)
