Pistachio Crusted Salmon with Lemon Garlic Broccoli

If you love pistachios, you're in for a surprise. My mom made this salmon a couple months ago, and now its one of my top favorite ways to prepare salmon. It makes it a little more exciting to eat. Its super simple and only requires a few ingredients! Serve over a bed of rice, a side of vegetables, lemon garlic pasta, or a salad. I'll have this for dinner, lunch the next day and dinner again! Its that delicious!


Pistachio Crusted Salmon Fillet

Ingredients

  • 3 lb Salmon Fillet

  • 1 ¼ cup Pistachios chopped

  • ⅓ cup light mayonnaise

  • 3 Tbsp Garlic Seasoning Blend (Susie Q’s Brand dried parsley, granulated garlic, salt&pepper) * bought from Costco


Directions

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Line a large baking sheet with parchment paper.

  3. Pat dry the salmon fillet and lay skin side down. Season the entire salmon with garlic seasoning blend. Spread the mayonnaise evenly.

  4. Coat the salmon with the chopped pistachios, add a pinch of salt. Cover with foil.

  5. Place in the middle top rack of the oven for 12 minutes. Remove the foil and let it roast for about 8-10 minutes longer, just until the pistachios are toasted and the salmon.


Note: Substitute the light mayonnaise for any type of mayo you’d like.


Roasted Garlic Lemon Broccoli


Ingredients

  • 4 broccoli crowns cut into florets or 2lb bag

  • 1 large garlic clove minced

  • 1 lemon zested

  • 3 tbsp olive oil

  • ½ tsp kosher salt

  • ¼ tsp fresh cracked pepper


Directions


  1. Preheat the oven to 400 degrees Fahrenheit.

  2. In a large bowl, mix the olive oil, garlic, salt, pepper, lemon zest. Place the broccoli in the large bowl and toss until each broccoli is coated.

  3. Place the broccoli in a large sheet pan and roast on the top middle rack for 10-12 minutes, or until tender.
