Spicy Chorizo Bean Dip

In my family we grew up eating refried beans with chips. My mom always had a pot of beans on the stove and they were either whole boiled in a pot (de la olla) or they were mashed beans (re-fried beans). The combination of chorizo and beans is a true match! Its such a great appetizer, especially for game day. I made it with homemade baked chips and everyone loved it!

Ingredients 

  • 1 lb Chorizo 

  • 2 ½ cups leftover whole boiled pinto or Peruvian beans or you can use canned refried beans

  • 1 large jalapeño, diced finely

  • Shredded Mexican cheese 


Directions

  1. Preheat oven to 400 degrees. 

  2. In a medium size sauce pot, cook the chorizo for about 5 minutes, till slightly browned. Add the jalapeños. Pour the whole beans or re-fried beans. Allow it to come to a simmer. Mash the beans in the pot with the chorizo mixture (mash only if your beans are whole). Let it simmer for another 3-5 minutes. The beans will start to thicken. Pour the beans in a small baking dish. Top with shredded cheese. Place in the oven for 10-12 minutes. Enjoy with tortilla chips.
