Avocado Egg Rolls with Sweet and Spicy Dipping Sauce

We all have a favorite restaurant that we love. In particular, we have a favorite appetizer or appetizers...because sometimes two is better than one! We crave them when we go out to eat or its basically our go to snack to pair with our beer or cocktail...Any of this ring a bell? Sometimes, this is my husband and I!

BJs Brewhouse is one our favorites. Their avocado egg rolls are usually a must to order, along with some boneless wings. I am here to tell you that I have have re-created the avocado egg roll recipe. However, I changed up the sauce by making my Thai sweet and spicy sauce and it works! The sweet and spice compliments the crunchy exterior and creamy interior thats coming from the avocados.

These are baked, not fried. So, it's a little lighter and easier to clean up.

Make these for dinner as an appetizer or for a large crowd on game day! They will be a hit!




Avocado Egg Rolls with Sweet and Spicy Dipping Sauce

Yield- 10-12 egg rolls


Ingredients

  • 3 avocados, diced

  • 3 tbsp chopped sun dried tomatoes

  • 1 tbsp packed chopped cilantro

  • 1 shallot or quarter purple onion, finely chopped

  • Half lemon/ lime, juiced, about 1.5 tbsp

  • 1 tsp kosher salt

  • ¼ tsp fresh cracked pepper

  • 1 package egg roll wraps

  • water


Sweet and Spicy Dipping Sauce

  • 4 tbsp Thai sweet chili sauce

  • 1 tsp lime juice

  • 1 tsp low sodium soy sauce

  • 1 tsp sriracha

  • 1 garlic clove, minced



Directions

  1. Preheat the oven to 425 degrees Fahrenheit. Place a sheet of parchment paper on a baking sheet and drizzle with olive oil.

  2. In a medium size bowl, combine the diced avocados, salt, pepper and lime juice. Set aside.

  3. Place the sun dried tomatoes, cilantro and shallot in separate small bowls and set aside.

  4. Assemble a line with the egg roll wrappers, bowl of avocado, sun dried tomatoes, cilantro, shallots and the baking sheet. Put some water in a little bowl, this will act as the glue.

  5. Take one egg roll wrapper, place two tbsp of avocado, sprinkle in some shallot, cilantro and sundried tomatoes. Brush the sides with water. Fold over the sides and roll. Repeat. Brush all egg rolls with olive oil.

  6. Bake for 12 minutes, then them flip them over. Bake for 5-8 more minutes until they are golden brown on all sides.

  7. Meanwhile, combine all the ingredients for the dipping sauce in a small bowl and place in a serving dish with the avocado egg rolls. Ready to serve.
